One-pot veggie packed Sloppy Joe recipe
This recipe is an easy one that feeds a lot of mouths! Feel free to sub out other veggies based on what your family likes or what you have on hand. Can be served with or without a bun. Pairs well with pasta salad, potatoes/french fries, or potato chips.
Ingredients:
2 lbs ground beef
2 large carrots
4 stalks celery
1 red bell pepper (any color works)
1 zucchini
1 yellow squash
1 medium onion
6 cloves garlic
2 15 oz cans organic tomato sauce
2 tbsp organic coconut sugar (or brown sugar)
1 tbsp dijon mustard
3 tbsp Worcestershire sauce (or steak sauce in a pinch)
1 tsp salt, or more to taste
1/2 tsp black pepper
Directions:
Gather veggies, including garlic and onion, and dice according to desired size. I personally like the celery and bell pepper to be a little larger for some extra crunch. If trying to “hide” the veggies from picky eaters or you just prefer a smoother texture, dicing smaller will be the way to go!
Brown the ground beef in a large skillet or stockpot until fully cooked.
Add all the veggies into the browned ground beef. Saute for 5-10 minutes, or until veggies are starting to soften.
To the veggies and ground beef, add tomato sauce, coconut sugar, dijon mustard, Worcestershire sauce, salt, and pepper. Stir.
Put lid on and let simmer until veggies are softened.
